Abstract

This report focuses on exploring the immense implications of cloud kitchens to the urban food environment in India. With such fast urbanization and penetration rates of smartphones, cloud kitchens are a paradigm shift that provides greater efficiency, less start-up cost to entrepreneurs and optimization of operations that will result in lower costs and food waste. They use digital tools, artificial intelligence, and cloud computing to predict demand at a high level and allocate resources effectively, which is fundamentally transforming the traditional relations in the food system and contributes to economic growth. Nonetheless, this fast growth comes with some serious challenges. These include rise in single-use packaging waste and an augmentation of emissions by the surging number of vehicles during delivery. Such logistical challenges as traffic jams in the cities and variable fuel prices also complicate operations. Another problem that the industry has to contend with is the socio-economic imbalances that various food aggregators exercise over smaller cloud kitchens and gig workers, and how these actors have unfair practices and asymmetry of information against these groups of stakeholders, which typically do not have conventional labour protections. Those should be met by the report, as it should support the use of green packaging and delivery strategies, establish collaboration with local manufacturers, introduce political incentives in eco-friendly business and fair labour relationships, and inform consumers about sustainable food consumption via delivery apps.
